Tres Leches Cake in the Pan |
I had a Mexican wave going through recently and more than the tacos and the guacamole my heart yearned for something really sweet. So I figured, what better stage than this to debut my Tres Leches Cake.
Now for those not in the know, Tres Leches means three milks. Now before you scratch your head and pull out your hair for no reason, let me ask you to stop. Explanations are right round the corner and you needn't flinch while making this delicious yet simple cake.
Its yummilicious and a must have in your repertoire. Dress it up and its fit for a party (like tonight). Just throw it together and it is still a slice of heaven.
So without much ado, here's my adapted recipe for an easy to use and sure to deliver cake.
For the cake:
1-1/4 cup all purpose regular flour
1-1/2 tsp Baking salt
A pinch of salt
6 whole egss [whites and yols separated]
1 cup confectioner's sugar [divided in half]
1 tsp vanilla extract
1/3 cup whole milk
For the pouring liquid:
1 can condensed milk
1 can evaporated milk
1 can heavy cream
1/2 cup cherry juice [optional, I use it to enhance the cherry flavour over all]
For the topping:
1 cup heavy whipping cream
A handful of Bing cherries.
Now getting on with it.
The cake:
1. Mix the flour, baking powder and salt together.
2. Beat the egg yolks with the divided sugar with an electric mix till it becomes pale yellow.
3. Add milk and the vanilla extract and beat the eggs further.
4. Now add the yolk mixture to the flour mixture and mix in properly.
5. Take the egg whites and keep beating them on a high on the electric mix till it forms soft peaks.
6. Now one teaspoon at a time mix in the sugar with the egg whites and keep beating.
7. When everything is incorporated, fold in the egg whites with the yolk-flour mixture and gently mix.
8. Pour the batter in a prepared cake tin and bake it at 180 degrees Celsius till 35 mins.
9. Check for done-ness by inserting a toothpick in the center till it comes out clean.
Pouring Mix:
1. Mix the milk kinds of milk and the cherry juice together.
Topping:
1. Whip the cream till its soft and forms peaks.
The art of it lies in the pouring of the milks. |
2. Incorporate the sugar into it.
Bringing it all together:
1. While the done cake is still warm in the pan, pour the entire pouring mix over it.
2. Take special care to pour it over the edges.
3. After an hour or so, once the cake is sufficiently cooled down, slather the whipping cream on top.
4. Adorn it with Bing cherries on top generously.
